Pumpkin Spiked Lattes

The iconic Pumpkin Spiced Latte (or “PSL,” to those in the know) has become a universal symbol with Fall. As soon as Starbucks rolls out their limited-edition seasonal drink each year, you know it’s time to stash away your open-toed shoes and start piling on the sweaters. There’s something about the combination of pumpkin pie spice, strong espresso and foamy milk that makes us want to wrap ourselves in flannel and take a trip to the pumpkin patch.

Whether you’re loyal to Starbucks or like to get creative at home, pumpkin spice seems to come in every possible form, from scented candles to Greek yogurt. Now, it’s the perfect addition to cold-weather cocktails (or just your mid-afternoon coffee).

Baileys has released a limited edition Pumpkin Spice Irish cream liqueur, blended with flavors like cinnamon, maple syrup, brown sugar and baked pie crust. So, basically, drinkable pumpkin pie that will give you a buzz. Does anybody not win in this situation? Sadly, it’s only available through November, so stock up or get your fill while the autumn leaves are still falling.

Try making a pumpkin spiked latte for a cozy cocktail. You can also add pumpkin spice Baileys to chai tea, creamy iced coffee and even an insane boozy cheesecake. Baileys’ website has recipe ideas for putting this seasonal liqueur to work – like to sweeten up an Old Fashioned by shaking Baileys Pumpkin Spice with bourbon. Not sure Don Draper would’ve approved, but your PSL drinking friends will probably go crazy.

You can swap this pumpkin spice version of Baileys anywhere you’d usually use Irish crème – think: a PSL-inspired mudslide, white Russian or dessert-worthy martini. Or, add it to a big batch of eggnog to make the holidays extra fun – and extra festive – this year.

Instructions
BLEND together heavy whipping cream and sugar in a bowl using a hand mixer. Whip until stiff peaks begin to form, then set aside.
ADD Bailey Pumpkin Spice, coffee and milk to a cocktail shaker, over ice.
SHAKE until well combined.
STRAIN cocktails evenly into two glasses.
TOP with fresh whipped cream. Dust with cinnamon. Serve.
