Ingredients
2 garlic cloves, chopped
½ cup olive oil
Salt and pepper, to taste
4 stems cilantro, fresh
4 mint leaves, fresh
Instructions
PLACE olive oil and garlic in a frying pan over medium heat.
LET garlic simmer until golden brown, then add herbs and crumbled cornbread.
STIR ingredients and let cook for a few minutes.
ADD enough water to just cover the mix in the pan.
PLACE eggs on top, careful not to break the yolk, evenly spaced. Cover the pan.
