Ingredients
  

CUPCAKES

  • 1 1/2 cups all-purpose flour
  • 2 tsps baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter
  • 1 cup white sugar
  • 2 medium eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 3 limes , juiced

FROSTING

  • 1 cup unsalted butter
  • 4 cups powdered sugar
  • 4 tbsps tequila
  • 1 lime , juiced
  • Food coloring (optional)
  • Slices of lime , to garnish

Instructions
 

  • PREHEAT oven to 350°F.
  • LINE a muffin tin with 12 cupcake liners.
  • MIX the flour, baking soda and salt in a medium sized bowl. Then set aside.
  • BEAT the butter with a hand mixer until smooth (make sure your butter is at room temperature before you begin) in a large bowl. Add in the sugar, eggs and vanilla extract and beat until well combined.
  • ADD in the dry ingredients slowly until fully incorporated. Then, gradually add in whole milk and lime juice, careful to not over-beat.
  • POUR your batter into the cupcake liners until about ¾ full.
  • BAKE at 350°F for about 15 - 20 minutes, or until a toothpick comes out clean. Take the cupcakes out of the muffin pan and allow to cool.
  • MAKE the frosting by beating butter until smooth. Gradually add in powdered sugar, until well combined. Then mix in tequila and lime juice. If you would like, slowly add in a tiny bit of food coloring, one drop at a time, until you get your desired, light-green hue.
  • FROST cupcakes, garnish with a slice of lime and serve!
