Ingredients
1 pinch salt
1 cup sugar
½ cup flour
6 eggs (2 whole eggs + 4 yolks)
Orange peel, for garnish
Vegetable oil, for frying
Sugar and cinnamon, for coating
Instructions
PEEL pumpkin, remove seeds and cut into 1”x1” squares.
BOIL pumpkin with a pinch of salt until soft but not mushy. Once cooked, drain all water and pat pumpkin dry with a cloth.
LET sit overnight in a sealed container.
COMBINE pumpkin with sugar, flour, baking powder, 2 eggs and 4 yolks until it forms a dough.
LET sit for 15 minutes then form into small balls, about the size of a tangerine.
HEAT vegetable oil until almost (but not quite) sizzling.
Drop in dough balls, rotating periodically, until fried through. Once finished, place on a paper towel covered plate to cool.
ROLL the balls in sugar and cinnamon, once cooled, until lightly coated.
SERVE and enjoy!

    In your recipe for Filhoses de Ab’oboro it calls for orange peel but in the directions it doesn’t state how or what to do with it. Wold it be possible to enlighten me on this matter?

    What’s the equivalent amount of canned pumpkin versus the called for 1 small pumpkin?

    i just read that a 3.8 lb pumpkin makes 4-4.5 cups of puree

    What weight would a small pumpkin be? Because 4-4.5 cups of pumpkin puree seems like alot for the other ingredients.
