Migas á Antiga
Migas à Antiga is a traditional Portuguese dish made with crumbled broa (Portuguese cornbread), garlic, olive oil, and eggs. Ingredients
- 7 oz broa (portuguese cornbread) , crumbled
- 2 garlic cloves , chopped
- ½ cup olive oil
- 4 eggs
- Salt and pepper , to taste
- 4 stems cilantro , fresh
- 4 mint leaves , fresh
Instructions
- PLACE olive oil and garlic in a frying pan over medium heat.
- LET garlic simmer until golden brown, then add herbs and crumbled cornbread.
- STIR ingredients and let cook for a few minutes.
- ADD enough water to just cover the mix in the pan.
- PLACE eggs on top, careful not to break the yolk, evenly spaced. Cover the pan.
