Ingredients
  

  • 7 oz broa (portuguese cornbread) , crumbled
  • 2 garlic cloves , chopped
  • ½ cup olive oil
  • 4 eggs
  • Salt and pepper , to taste
  • 4 stems cilantro , fresh
  • 4 mint leaves , fresh

Instructions
 

  • PLACE olive oil and garlic in a frying pan over medium heat.
  • LET garlic simmer until golden brown, then add herbs and crumbled cornbread.
  • STIR ingredients and let cook for a few minutes.
  • ADD enough water to just cover the mix in the pan.
  • PLACE eggs on top, careful not to break the yolk, evenly spaced. Cover the pan.
