Grilled Calamari
Grilled Calamari is a delightful and simple dish that showcases the tender texture and delicate flavor of calamari, enhanced by a marinade of white wine, pernod, olive oil, garlic, and fresh parsley. This dish is perfect for a light appetizer or a main course for seafood lovers.
Ingredients
- ½ lb calamari/squid
- ½ cup white wine
- ¼ oz pernod
- ¼ cup olive oil
- 2 cloves garlic
- 1 bunch parsley

Instructions
For Reduction
- BLEND white wine, pernod and olive oil, then add finely chopped garlic and parsley to balance wine, oil and pernod.
For Calamari
- LIGHTLY BASTE calamari with white wine, pernod and olive oil.
- GRILL to medium over very hot grill then place the calamari in full reduction bath and serve.
