Popcorn balls are the perfect way to do that and are so fun because the herbs and spices can be easily changed to satisfy any craving. These coconut curry popcorn balls hit almost all the flavor profiles with a little sweetness, saltiness, some heat and complexity from the curry.
Coconut Curry Popcorn Balls
Coconut Curry Popcorn Balls are a unique and flavorful treat that combines the crunch of air-popped popcorn with the bold flavors of curry powder, coconut flakes, and a hint of chili. These popcorn balls are sweetened with honey and sugar, creating a delightful balance of sweet and savory. Perfect for parties or a fun snack!
Ingredients
- 8 cups Wise air-popped sea salt popcorn
- ⅓ cup honey
- 1 cup sugar
- 1 teaspoon white vinegar
- 1 teaspoon sea salt
- 4 tablespoons vegetable oil
- 3 teaspoons curry powder , plus extra for dusting
- ¼ teaspoon vanilla extract
- 1 cup unsweetened coconut flakes
- ½ teaspoon chili powder
Instructions
- POUR a tablespoon vegetable oil into a large bowl to coat the sides.
- ADD popcorn to the bowl.
- PLACE honey, sugar, vinegar and salt in a small saucepan over low heat, stirring constantly until it begins to boil, about 5 minutes. Remove from heat and stir in oil, curry powder and vanilla extract.
- DRIZZLE honey mixture over popcorn while hot. Add coconut and mix well, making sure every piece of popcorn is covered.
- WAIT until popcorn is cool enough to touch.
- PRESS the mixture into balls slightly larger than golf ball.
- PLACE on waxed paper and sift chili powder and addition curry powder over the popcorn balls. Let cool completely.
