Spring Vegetable Tart With Goat Cheese

Wine Pairing: 2011 La Sauvignon

Ingredients 

  • 1  pie crust
  • 2  leeks
  • 1 shallot
  • 1⁄4 bunch asparagus
  • 6 ounces yellow beets
  • 3 ounces haricots verts
  • 3 ounces wild mushrooms
  • 1  packet butter
  • 2  sprigs tarragon
  • 2 ounces crumbled goat cheese

Instructions

1. Prepare Leeks

Preheat oven to 400°F. Set pie crust aside to soften. Trim and discard roots and tops of leeks, leaving only white and light green parts. Cut into 1⁄4-inch slices. Place in a medium bowl of cold water and allow dirt to sink to the bottom.

2. Prepare Vegetables

Peel shallot and thinly slice. Rinse asparagus and trim and discard woody ends. Cut spears into 1⁄2-inch pieces. Peel beets and cut into 1⁄8-inch slices. Rinse haricots verts, trim ends, and cut into 1⁄2 inch pieces. Wipe mushrooms clean with a damp paper towel. Discard stems and roughly chop caps.

3. Cook Vegetables

Drain leeks. Heat butter and 1 teaspoon olive oil in a large pan over medium heat. When oil is shimmering, add shallots, asparagus, beets, haricots verts, leeks, and mushrooms. Cook until vegetables are tender, about 5 minutes.

4. Season Vegetables

Rinse tarragon. Pick and roughly chop leaves, discarding stems. Stir leaves into pan with vegetables. Taste and add salt and pepper as needed. Remove pan from heat.

5. Bake Tart

Remove pie crust from tin and transfer to a baking sheet. Pinch together any cracks. Spoon vegetables into center of pie crust, spreading into an even layer, leaving a 1-inch border. Fold border in over vegetables. Bake tart until golden and crisp, about 20 minutes.

6. Plate Tart

Remove tart from oven and sprinkle with crumbled goat cheese. Return to the oven and bake until cheese is warmed through, about 5 minutes.Cut into slices and serve.
