The Tasting Notes

Germany’s Mosel region produces the best Riesling on earth. Its steep, slate-strewn slopes yield some of the most tropical, tart and exotic white grapes bottled today. It is here that the good Dr. Pauly-Bergweiler serves up a dry (trocken) version brimming with nectarine, yellow plum, and key lime all bound by a tight acidity. This wine is not sweet (literally) but it is noble as hell. Plus, it’s just what the doctor ordered.

Nose: Apple, plum and citrus at a tropical themed party

Palate: Acid driven, so fresh and so clean

The Perfect Pairing

Ingredients
1⁄2 cup soy sauce
1⁄4 cup red wine vinegar
2 tablespoons honey
2 tablespoons olive oil
4 garlic cloves, minced
2 tablespoons minced fresh peeled ginger
1 1⁄2 teaspoons crushed red pepper flakes
1⁄4 teaspoon black pepper
4 lbs chicken wings, tips removed

Steps
In a medium sized bowl, whisk together soy sauce, vinegar, honey, oil, garlic, red pepper flakes and black pepper.
Add chicken wings and turn to coat.
Marinate covered in refrigerator 2 hours or overnight.
Heat oven to 450°F.
Place wings on rack in broiler pan.
Roast for 30 minutes.
To crisp skin if desired,increase oven temperate to broil.
Broil wings for 1-2 minutes or until skin is crisp.
