Wine Soaked Dishes: Saucy Steak and Grilled Scallions

We asked Chef Ashton Keefe to come up with some delicious recipes and then made sure they were absolutely soaked in wine. Why? Because why not.

Make your next steak the wine soaked way by following the recipe below!

 

Ingredients (Serves 6):

1 lb. flank steak

2 cups red wine, try Cabernet Sauvignon or Malbec

1/4 cup plus 2 tablespoons extra virgin olive oil

1/4 cup Worcestershire sauce

3 bunches thyme or rosemary

1 teaspoons fine sea salt

3 cloves garlic, smashed

2 bunches scallions, trimmed

 

Preparation:

In a large plastic bag add steak, wine, 1/4 cup olive oil, Worcestershire sauce, herbs and garlic. Marinate for 3-4 hours, but no longer. Remove steak from marinade and place remaining marinade in a small saucepan. Simmer and reduce until slightly thickened.

Pat dry steak and season with salt. Preheat grill or grill pan to medium high heat and sear steak 3-4 minutes per side, for medium rare. Set aside to rest.

In a large bowl toss scallions with remaining olive oil. And grill until slightly charred, about minutes.

Thinly slice steak on the bias against the grain and plate on top of grilled scallions. Drizzle with reduced marinade.
